Yummy Penne


This is one of our favorite stand-bys for dinner because: 1) it's really fast and easy; and 2) it doesn't require any perishable ingredients (at least the way we usually make it) but it also isn't super packaged or filled with preservatives.

We usually garnish it with pine nuts and sun-dried tomatoes (I prefer the ones that come oil-packed and pre-sliced). We've also garnished it with dried cranberries and toasted almonds, which was also very good.

Yummy Penne:

16 oz penne pasta (or other pasta)
1 Tbsp olive oil
1/2 cup freshly grated parmesan
4 Tbsp minced fresh basil (or 4 tsp dried)
4 Tbsp minced fresh parsley (or 4 tsp dried)
Pepper, to taste
Garnish with tomatoes, sun-dried tomatoes, and/or toasted pine nuts

Cook pasta until al dente. Drain well and return to pot. Toss with olive oil Toss with remaining ingredients. Garnish as desired.
